Gluten free (oat flour) brownies

  • 3/4 c. oat flour 
  • 2 T unsweetened cocoa powder 
  • 1/2 tsp. baking powder 
  • 1/4 tsp. salt 
  • 3/4 c. sugar 
  • 3 large eggs 
  • 1 tsp. vanilla 
  • 1 tsp. instant coffee granules 
  • 1/2 c. unsalted butter 
  • 3/4 c. bittersweet chocolate chips 

    1. Mix together the oat flour, cocoa powder, baking powder and salt — set aside. 
    2. In a separate bowl, melt together 1/2 cup chocolate chips with the butter. 
    3. While the chocolate is melting, beat together the sugar, eggs, vanilla and coffee granules. 
    4. Slowly pour the melted chocolate and butter into the egg mixture while whisking until fully incorporated. Add slowly so that the raw eggs don’t cook upon contact. 
    5. Pour the chocolate mixture in with the dry ingredients and mix completely. 
    6. Pour the batter in an 8 x 8 dish lined with parchment paper. 
    7. Sprinkle the top with the remaining 1/4 cup chocolate chips. 
    8. Bake for ~30 minutes @ 350F or until a toothpick inserted into the center comes out clean. Let cool completely before cutting.
