Gluten free (oat flour) brownies
- 3/4 c. oat flour
- 2 T unsweetened cocoa powder
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 3/4 c. sugar
- 3 large eggs
- 1 tsp. vanilla
- 1 tsp. instant coffee granules
- 1/2 c. unsalted butter
- 3/4 c. bittersweet chocolate chips
- Mix together the oat flour, cocoa powder, baking powder and salt — set aside.
- In a separate bowl, melt together 1/2 cup chocolate chips with the butter.
- While the chocolate is melting, beat together the sugar, eggs, vanilla and coffee granules.
- Slowly pour the melted chocolate and butter into the egg mixture while whisking until fully incorporated. Add slowly so that the raw eggs don’t cook upon contact.
- Pour the chocolate mixture in with the dry ingredients and mix completely.
- Pour the batter in an 8 x 8 dish lined with parchment paper.
- Sprinkle the top with the remaining 1/4 cup chocolate chips.
- Bake for ~30 minutes @ 350F or until a toothpick inserted into the center comes out clean. Let cool completely before cutting.
